I don't know how, or when, or why for that matter, I came to be so obsessed with Peanut Butter.  But I am.  And as accepting the fact is the first step to recovery, I have decided to indulge in this obsession whenever, however possible, allowing it to healthily run its course (yes healthy and obsession were just used in the same sentence).  Thanks to a little friend in Austin, TX, my Peanut Butter repertoire now includes smoothies.  Namely in the form of my new favourite, Powerhouse Peanut Butter Smoothie (so named simply because it is as hearty and nutritious as it is delicious, and just so happens to be the perfect pre-workout snack.  Meal?  Drink...).

Additionally, I've found that over ripe, mushy bananas, while slightly less appealing to eat as are, (and consequently making rather poor Peanut Butter vessels), instead make for the most perfect creamy smoothie base.

Without further ado, read on and try.  This is literally everything I learnt about Peanut Butter in America, in one drink.  And I suppose if anyone knows how to pair Peanut Butter, it's them yanks.  Right?  Don't be afraid.  Plus side, so many potential substitutions and pairings, so don't forget to read on down through 'Consume'.

Powerhouse Peanut Butter Smoothie
nibs etc. original recipe. Serves 1-2

Ingredients:
1 Banana
1 Apple (something with a bit of bite/acidity - I happened to have Gala on hand...)
2 Celery Stalks (leaves included)
1 tsp Peanut Butter (more or little to taste - I found 1 tbsp to be too much).
1/2 tsp Lemon Juice

Method:
Into a blender, break your banana into pieces and add 3 ice cubes.  Blend until liquified and smooth.  Then add your chopped apple.  Blend.  Your roughly sliced celery, peanut butter and lemon (for zing).  Blend.  Pour.  Serve.  Then imagine yourself running one of those awesome breakfast bowl bars that are now all the rage and go crazy with your toppings, mix-ins and pairings.

Consume:
As is, topped with a couple dollops of your favourite 'jelly' (yes I am now shamelessly encouraging you to drink your PB+J): stewed/poached/puréed/compote-ed berries/cherries/grapes.
Served as a smoothie bowl, topping with your favourite sliced fruits, granola, shredded coconut, cocoa nibs, honey.
Consume as a drink and side to your tartine, breakfast bowl, cereal bar (for you on-the-goers), or, with cake.  Which I personally believe makes for the most balanced meal.
Substitute the Peanut Butter for any Nut Butter of your preference.
